Shiitake mushrooms contain B1 (thiamin), B2 (riboflavin), B12 and vitamin D. They also have anti-tumor, anti-viral, and anti-bacterial properties. Shiitake mushrooms have all 9 of the amino acids in a ratio similar to the 'ideal protein' and are 20% protein by dry weight. Calcium, phosphorous, iron, sodium and potassium are also present in significant amounts. The fiber of Shiitake mushrooms contain eritadenine that produces a cholesterol lowering effect and shiitake is considered a low calorie food.
