Monkey-head Mushroom, American Ginseng and Pork Soup

THERAPEUTIC EFFECTS:

Clear heat and toxins, prevent and treat cancer. Also suitable for the whole family and people who are generally weak and can catch cold/flu easily. 

INGREDIENTS:

  • Monkey-head mushroom 猴頭菇 -100gm
  • Pork-240gm
  • American ginseng 花旗參 – 30gm
  • Dried lungan fruit (long yan rou) 龍眼肉 -10 

1.   Soak mushroom until fully re-hydrated and squeeze out yellowish water. Repeat a few times until mushroom is clean and then separate into smaller pieces.

2.   Wash pork and cut into large pieces and put in boiling water to cook for a few minutes. Remove and rinse.

3.   Rinse herbs and put all ingredients in a soup pot with about 12 cups or 3 litres of water. Bring to a boil, remove foam and reduce heat to simmer for 3 hours to about 4 cups of soup (add boiling water to the cooking if necessary).

4.   Add salt to taste and serve.
