Mushroom Duck Congee


Dry throat and mouth with burning sensation inside after chemotherapy treatment.

INGREDIENTS: (3 to 4 servings)

  • Dried Shitake Mushroom冬菇 - 8
  • Duck – one whole
  • Chinese broccoli – 180gm
  • Rice – one cup

1.   Soak mushroom until fully rehydrated, rinse and cut into slices.

2.   Wash duck, cut into quarters, remove skin, neck, tail and fat. Put duck in boiling water to cook for 5 minutes, remove and rinse.

3.   Put mushroom and duck in a soup pot with about 3 litres of water, bring to a boil, remove foam and reduce heat to medium to cook for 1.5 hours to half of water left.

4.   Rinse rice and add to the soup and continue to cook for another 30 minutes.

5.   Wash broccoli and rinse clean. Shred broccoli and add to the cooking for another 15 minutes.

6.   Add seasoning (salt and pepper) to serve.


Eat as meal.
