Pig Lung and White Pepper Soup

SYMPTOMS:  

Chronic cough in the morning and especially in winter months with lots of phlegm and cannot be cured for months.

THERAPEUTIC EFFECTS:         

 Drive out cough of the extreme cold and damp type.

INGREDIENTS: 

  • Pig lung 豬肺- one
  • White pepper corn - 40gm

1.   Wash lung by tying the lung-tube to water tap and turn on the tap to force water in for about 10 minutes. Remove from tap and press water out as much as possible. Repeat the process until water coming out is clear. If the lung comes with no lung-tube, then just repeat step 2 twice.

2.   Cut lung into big pieces and put them in boiling water to cook for 5 minutes. Remove and rinse.

3.   Crush pepper and put together with lung and about 2 litres of water. Bring to a boil, remove foam and reduce heat to simmer for 1.5 hour to about 2 cups of soup.

4.   Add salt to serve. Eat some lung with soup.
