Bitter Melon and Fresh Water Clam Soup

SYMPTOMS:

Always thirsty and frequent urination, unstable mood due to the fluctuation of blood sugar levels.

THERAPEUTIC EFFECTS:

Quench thirst, lower blood sugar and lower internal heat.

INGREDIENTS:

  • Bitter melon 苦瓜 - one
  • Fresh water clam meat 鮮蚌肉 - 160gm
  • Lime - one (juiced)


1.   Keep fresh water clams in water for a few hours and change water a couple of times.

2.   Rinse clams and put them in boiling water until shells split open. Strain, retrieve meat and keep aside.

3.   Wash bitter melon, cut open lengthwise, remove seeds in the middle with spoon and cut into pieces.

4.   Put clam and bitter melon in a pot with about 6 cups of water. Bring to a boil, reduce heat to medium and cook for an hour to about one cup of soup left.

5.   Add lime juice, salt and pepper to serve.

USAGE:

No restriction. Serve with meal.
