Lo-han Fruit, Water Cress and Pork Soup

SYMPTOMS:

THERAPEUTIC EFFECTS:

Regulate blood sugar, promote fluid to quench thirst. 

INGREDIENTS:

  • Lo-han fruit 羅漢果 - one
  • Water cress 西洋菜 – 180gm
  • Pork – 240gm

1.   Wash pork, cut into large pieces and put in boiling water to cook for a few minutes, remove and rinse.

2.   Wash water cress a few times and drain.

3.   Put about 10 cups of water in a soup pot with pork and bring to a boil. Remove foam and then add water cress. Lower heat to medium and cook for 2 hours.

4.   Then break open lo-han fruit and add to the cooking for another 15 minutes.

5.    Add salt to taste and serve. Eat water cress with soup.
