Tomato, Eggplant and Tofu


High blood pressure and hardening of arteries.


Lower blood pressure and blood lipids, soften arteries and prevent blood vessels damage.


  • Egg plant 茄子 - two
  • Tomato 番茄 - one
  • Tofu 豆腐 – one block
  • Brown Vinegar 浙醋 - 2 spoons
  • Minced garlic – one spoon

1.   Rinse tomato and cut into cubes.

2.   Rinse egg plant, cut into cubes and put in water with one spoon of salt to soak for ten minutes. Then rinse and strain.

3.   Rinse tofu and cut into cubes.

4.   Heat one spoon of oil in a pan and add garlic. Stir briefly and add egg plant to cook for a few minutes. Add tomato and stir to mix and cook for about 10 minutes.

5.   Add tofu to mix and add vinegar and other seasoning (salt, sugar, pepper, sesame oil) and let it cook for another 10 minutes and serve.
