Soybean Sprout, Mushroom and Chicken Soup

SYMPTOMS:

High blood pressure, weak and lack of energy.

THERAPEUTIC EFFECTS:

Lower blood pressure, improve energy and appetite.

INGREDIENTS: (2 TO 3 SERVINGS)

  • Soybean sprout 大豆芽 - 320gm
  • Fresh mushroom 鮮冬菇 - 160gm
  • Chicken - one whole
  • Ginger 生薑 - 1 slice

1.     Wash chicken, remove skin and fat and cut into 4 pieces. Put chicken in boiling water to cook for a few minutes, remove and rinse.

2.     Put chicken and ginger in a soup pot with about 10 cups of water and bring to a boil. Remove foam and reduce heat to medium and cook for 2 hours.

3.     Wash bean sprouts, drain and stir-fry them in a pan without oil for a few minutes until soften and add to the cooking.

4.     Use water and some salt to wash mushroom. Cut out stem, rinse and cut mushroom into slices and add to the soup and continue the cooking for another 30 minutes.

5.    Add seasoning (salt and pepper) to serve and eat some content with soup.
