Mushrooms Madly Stew




Improve bone health, promote vital fluid, improve immune function and prevent cancer.


  • Snow-ear mushroom (dried) 雪耳 - one
  • Wood-ear mushroom (dried) 木耳 - one
  • Cloud-ear/Silver-ear mushroom (dried)雲耳/銀耳 - a few
  • Yellow-ear mushroom (dried) 黃耳 - a few
  • Shiitake mushroom (fresh) 鮮冬菇 - a few
  • Button mushroom (fresh)蘑菇 - a few
  • Straw Mushroom (dried) 草菇 - a few
  • Pork spinal bone – 400 gm
  • Minced ginger – one table spoon
  • Minced garlic – one table spoon

1.  Rinse pork bone and put in boiling water to cook for 5 minutes. Remove, rinse and put in a large soup pot with plenty of water. Cook over medium high heat for one hour to make about 2 cups of stock.

2.  Soak all dried mushrooms separately until they are fully rehydrated. Rinse clean, cut out stems and cut bigger ones into bite size pieces.

3.  Rinse fresh mushrooms, cut out stems, cut into halves and set aside.

4.   Strain pork stock into another pot and put wood-ear mushroom to cook over medium heat for 20 minutes. Then add the rest of the dried mushrooms to continue the cooking to desire softness (about 30 minutes).

3.  Heat up a wok on medium heat, put in one spoon of olive oil and stir-fry ginger and garlic to bring out the flavour. Put fresh mushrooms in to stir-fry for a few minutes. Add two tablespoons of cooking wine and then a little bit of water to get the sizzling effect and aroma.  

4. Transfer fresh mushrooms to combine with other mushrooms in the pot. Add seasoning to taste (soy sauce, oyster sauce, sesame oil, sugar, salt, pepper, chilly sauce, etc.) and corn starch water (mix 2 teaspoons of cornstarch with 2 table spoons of water) to mix and serve.


No restriction. Best serve with rice and vegetable.


For vegetarian, use soy bean sprout (200 gm), red dates (8) and dried shiitake mushroom stem or the mushroom (half cup) to make stock or use water instead.
