Gingko Duck Soup (1821)

Gingko Duck Soup


Weak lungs with frequent cough and phlegm.


Moisturize the five vital organs, stop cough and clear phlegm, strengthen  lung and stomach.


  • Gingko 銀杏/白果 - 10
  • Duck - one
  • Chinese ham 金華火腿 - 5gm
  • Ginger - 25gm
  • Green onion- 2

1.  Remove hard shell of gingko with nutcracker. Put in hot water to boil for a few minutes, retrieve and soak in cold water. Remove membrane, cut into halves and remove small white stem in the middle.

2.  Wash duck, cut into four pieces, remove skin and fat, and put in boiling water to cook for 3 to 5 minutes, remove and rinse.

3.  Rinse ham and cut into slices. 

4.  Put all ingredients in a casserole with hot water covering all ingredients. Add salt, cooking wine, pepper and sesame oil and cover with lid.

5.  Place the casserole on a stainless steel cooling stand inside a bigger pot or a wok with enough hot water at the bottom. Cover casserole with lid.

6.  Cover the pot or wok with lid and cook over medium-high heat for 3 hours. Add boiling water to the cooking regularly to maintain continuous steaming and prevent burning.

7.  When done, eat content with soup.                     


No restriction.


Bring the soup to a boil in a pot for about 10 minutes and transfer the cooking to a slow cooker and cook for 5 hours with high heat.
