Wood-ear Mushroom & Chicken Soup (1824)

Wood-ear Mushroom & Chicken Soup




Promote blood circulation and lower internal heat, moisturize skin, and improve complexion and discolouring.


  • Chicken breast – one
  • Black wood-ear mushroom 黑木耳 – two
  • Carrot – half
  • Ginger – 3 slices
  • Green onion - one

1.   Wash chicken breast, cut out fat, thinly slice and shed. Mix in seasoning (garlic salt, pepper, a spoon of cooking wine, a pinch of corn starch and one spoon of sesame oil) and keep aside.

2.   Soak mushroom until fully hydrated (about 30 minutes),  rinse, cut out stem and shred.

3.   Shred carrot, ginger and green onion.

4.   Boil two cups of water and put mushroom in to cook for 15 minutes or to desire softness.

5    Add carrot to cook for 5 minutes. Lower heat to medium and add chicken. Stir until chicken is just cooked, add ginger and green onion. Add seasoning (salt, sugar, pepper, sesame oil) to soup and serve.
