Burdock, Carrot & Celery Salad
Lower blood pressure and cholesterol, promote faster food movement downward and detoxify.
- Burdock 牛膀 – shredded half cup
- Carrot – shredded half cup
- Celery – shredded half cup
- Rice/Balsamic Vinegar – half cup
- Roasted sesame seed – one spoon
1. Peel burdock, shed thinly and soak in water with a spoon of vinegar to prevent browning.
2. Peel carrot, shred thinly and mix it with a spoon of salt for 5 minutes then rinse.
3. Peel celery and shred thinly.
4. Put burdock and carrot in a colander to strain and then mix with celery and vinegar. It is best to wait for an hour before retrieving them to serve as appetizer or add to salad green. Mix in salt and pepper and sprinkle roasted sesame seed on top to serve.
