Little Red Bean and Kutzu Soup

SYMPTOMS:

Excessive heat syndrome of red and painful eyes with discharge, constipation, painful mouth, stiff shoulder and neck, aching bones. (Usual symptoms found in smokers and people eating a lot of deep-fried foods)

THERAPEUTIC EFFECTS:

Clear internal heat; relieve muscle strain; promote internal fluid and relieve constipation; benefit stomach and spleen; disperse stagnant energy.

INGREDIENTS: (PER PERSON PER DAY)

  • Little red bean 赤小豆 - 60gm
  • Katzu 粉葛 - 1000gm
  • Lean pork - 350gm
  • Citrus peel - 6gm

1.    Peel and dice katzu and rinse.

2.    Soak little red beans for 10 minutes and rinse.

3.    Put all ingredients in a big pot with about 3 to 4 liters of water.

4.    Bring water to boil, lower to medium heat and let it simmer for over 3 hours with soup reducing to 4 to 5 cups left (add boiling water to the cooking if necessary).

5.    Add salt to serve. 

USAGE:

Drink soup as tea by two to three servings per day.
