Watercress, Chicken Liver & Gizzard Soup

SYMPTOMS:         

Over heat syndrome with dry mouth and throat, restless sleep, cough and phlegm, blood in stools.

THERAPEUTIC EFFECTS:

Clear heat and moisturize internal systems, clear phlegm and stop coughing.

INGREDIENTS: (2  to 3 SERVINGS)

  • Watercress 西洋菜 - 640gm
  • Chicken liver and gizzard - two sets
  • Dried lo-han fruit (lo-han-kwo) 羅漢果 - half
  • Southern apricot kernel 南杏 - 40gm
  • Northern apricot kernel 北杏 - 16gm
  • Citrus peel 陳皮 - one small piece

1.     Wash chicken liver and gizzard with some salt and rinse clean. Drain, cut into pieces and season with soy sauce, cooking wine, sugar, salt and cornstarch and set aside.

2.     Rinse watercress a few times.

3.     Rinse other ingredients.

4.     Put adequate water in a pot (about 1.5 to 2 liter) and bring to a boil. Put in watercress and other ingredients and cook for 30 minutes with medium heat.

5.     Put chicken liver and gizzard in and cook for another 10 minutes. Add salt to serve.  

USAGE:

No limitation. Most suitable for people who smoke or eat a lot of deep fried food.
