Monkey-head Mushroom and Chicken Soup

SYMPTOMS:

General weakness; anemia; weak digestion.

THERAPEUTIC EFFECTS:

Tonify blood, strengthen liver and spleen, improve blood circulation, lower blood sugar, blood pressure and cholesterol, can strengthen immune system, good for treating all kinds of cancer and ulcer.

INGREDIENTS: (2 to 3 SERVINGS)

  • Monkey-head mushroom 猴頭菇 - 80gm
  • Chicken - one whole (without  skin)
  • Red Dates 紅棗 - 4
  • Ginger- 3 slices
  • Lean pork - 100gm

1.     Soak mushroom until re-hydrated and soft (about 20 minutes) and rinse for a few times until water is clear.

2.     Soak dates for 5 to 10 minutes and rinse.

3.     Clean chicken, cut into 4 pieces and rinse.

4.     Rinse pork.

5.     Put chicken and pork in boiling water for a few minutes, remove and rinse.

6.     Put all ingredients in a big pot with plenty of water (about 22 to 3 liters) and bring to boil.

7.     Remove foam, reduce heat to medium and cook for 2 to 3 hours.

8.     Add salt to serve. Drink soup mainly.

USAGE:

No restriction. Suitable for the whole family. Can add a few dried scallops to increase taste and to tonify yin.
