Black Bean, Herbal Chicken Soup


Pale looking and lack of energy.

  • Black beans - 200 gm
  • Chinese Cornbind (ho shou wu) 何首烏 - 30gm
  • Goji-berry / Chinese Wolfberry (gou ji zi) 枸杞子 - 30gm
  • Chinese Yam (shan yao) 淮山 - 40gm
  • Chinese Jujube / Red Dates (da zao) 大棗 - 6
  • Chicken - one whole (2 to 3 lbs.)
  • Rice wine - 300 c.c.
  • Cooking wine - one table spoon
  • Fish bag - one

1.   Sock black bean for 1 hour, rinse and strain.

2.   Heat wok over medium heat and stir -fry black bean until 80% cooked.

3.   Wash chicken. Rinse herbs and put herbs inside a fish bag and put the bag inside the chicken.

4.   Put chicken and black beans in a pot, add rice wine and top with water until cover the whole chicken. Cover with lid.

5.   Cook chicken over high heat to bring to boil. Lower heat to simmer for over 2 hours.

6.   Add cooking wine and salt to serve.
