Longan Fruit, Walnut and Fish Head Soup




Calm nerve, relieve pressure, promote quality sleep, improve mental power and memory, improve overall health.


  • Asian Carp Head 大魚頭 – one (or substitute with lean pork)
  • Citrus peel 陳皮 – one piece
  • Ginger 老薑片 – two slices
  • Longan Fruit (long yan rou) 圓肉 – 30gm
  • Wild Chinese Jujube (suan zao ren) 酸棗仁 – 90gm (slightly grinded)
  • Walnut 合桃 – 60gm
  • Cooking wine – 2 spoons

1.   Wash fish head with salt and cut into halves.

2.   Soak walnut for 30 minutes. Put in boiling water to cook for 5 minutes, retrieve and rinse.

3.   Soak citrus peel until rehydrated, scrape out the white tissue and rinse.

4.   Heat up frying pan/wok. Put in 2 spoons of cooking oil. When hot, put in ginger and fish head to brown both sides. Sprinkle in cooking wine follow by a cup of hot boiling water to bring out the sizzling effect.

5.   Transfer the cooking to a pot with about 6 cups of water. Put all ingredients in and bring to boil. Lower heat to medium and let it simmer for 30 minutes. Add seasoning (salt, pepper and sesame oil) to serve. Eat fish head and soup.


No restriction. Suitable for children, adults and seniors.
