Astragalus, Monkey-head Mushroom and Chicken Soup

SYMPTOMS:

Deficiency spleen syndrome with poor digestion, lack of appetite, losing weight, or tumor growth in the digestive tract.

THERAPEUTIC EFFECTS:        

Benefit spleen and improve digestion, anti-tumor growth and improve immune system, lift yang energy and improve qi. 

INGREDIENTS: (2 Servings)            

  • Chicken - one whole
  • Monkey-head mushroom 猴頭菇 - 320gm
  • Astragalus (huang qi) 黃耆- 40gm
  • Ginger - 3 slices

1.  Soak mushroom with plenty of water and put aside.

2.   Wash chicken and cut into big pieces. Remove skin and obvious fat.

3.   Heat 2 spoons of oil in a skillet or wok and put in ginger and chicken to stir-fry until chicken is slightly cooked.

4.   Rinse herb. Put chicken, herb and ginger in a soup pot with about 3 litres of water and bring to boil. Remove foam and oil on top, reduce heat and simmer for 2 hours. Remove herb.

5.   Rinse mushroom until the water is clear. Cut mushroom into small pieces and add to the soup and continue the cooking for another 30 minutes. 

6.   Add salt to serve. Eat some mushroom with soup.

USAGE:       

Also suitable for treating gastritis.
