Chicken and Snow-ear Mushroom Soup


Weakness after ulcer surgery, intermittent stomach pain, yin deficiency with no appetite, insomnia or with weak digestion.


Benefit stomach and spleen, nourish yin and improve energy, improve appetite and moisturize intestines.

INGREDIENTS:  (3 to 4 servings)      

  • Chicken - one whole or use chicken breast
  • Snow-ear mushroom 雪耳 - 30gm
  • Lean pork - 120gm
  • Ginger - 3 slices

1.   Soak mushroom for half an hour until become soft and rinse clean. Remove stem and seperate into pieces.

2.   Rinse chicken, remove skin and obvious fat and cut into large pieces.

3.   If using whole chicken, cut it into quarters. Cut pork into large pieces. Put chicken and pork in boiling water to cook for 5 minutes. Remove and rinse.

4;   Put all ingredients in a pot with 3 litres of water. Bring to boil for 5 minutes, remove foam and reduce heat to medium and simmer for 2 to 3 hours to about half of the water.

5.   Add salt to serve. Eat some mushroom with soup.
