Chicken Spinach Noodle

  • Chicken breast / meat - 120gm
  • Chicken bone - 180gm
  • Carrot - one
  • Spinach - 200gm
  • Green onion - 2 (finely chopped)
  • Noodle - quantity as desire

1.   Rinse and cut chicken breast into thin strips and season with salt, sugar, soy sauce, pepper, cooking wine, a pinch of corn starch and a tea spoon of oil.

2.   Finely shred carrot. Rinse spinach and cut into sections.

3.   Rinse chicken bone and put in boiling water for a few minutes and remove. Put chicken bone and carrot with 4 cups of water and boil for 30 minutes to about 2 cups of water left. Strain and use it as soup base.

4.   Cook noodles in boiling water to slightly cooked and remove. Rinse with cold water and drain.

5.   Heat up soup base, add chicken slices and spinach and cook until they are just cook. Add noodle and finely chopped green onion and seasoning to serve.


Take frequently as lunch.
