Morinda Root, Sea Cucumber and Pork Hock Soup

SYMPTOMS:

General weakness, dizziness, tinnitus, sore loin, deteriorating eyesight and eyes become watery when being exposed to wind.

THERAPEUTIC EFFECTS:

Strengthen body and increase energy, prevent hardening of arteries, prevent liver and kidney malfunctions with hypertension.

INGREDIENTS: (2 to 3 SERVINGS)

  • Morinda root (ba ji tien) 巴戟天  - 40gm
  • Goji-berry / Chinese wolf-berry (gou ji zi) 枸杞子 - 40gm
  • Pre-soaked sea cucumber 海參 - 480gm
  • Pork boneless hock 豬展 - 120gm
  • Pitted red dates 紅棗 - 4
  • Ginger - 2 slices

1.  Wash sea cucumber and pork, cut them into big pieces and put in boiling water to cook for a few minutes. Remove, rinse and drain.

2.  Rinse herbs and put all ingredients in a soup pot with 3 litres of water. Bring to boil, remove foam and reduce heat to simmer for 3 hours.

3.  Add salt to serve.

USAGE:

Take regularly. Not suitable when having cold or flu.

ALTERNATIVE METHOD:

Start off with less water (about 1.5 liters) and bring soup to boil in a soup pot for 15 minutes. Then transfer the cooking to a slow cooker to cook for 4 to 5 hours on high heat..To save time and effort, use a timer to control the cooking overnight or while you are out.
