Mutton Congee

SYMPTOMS:

Generally weak and with cold constitution.

THERAPEUTIC EFFECTS:

Strengthen body, promote yin, improve kidney functions and warming body to prevent sickness in cold weather.

INGREDIENTS:

  • Lamb spinal bone 羊背骨 – 300gm
  • Mutton 羊肉 – 180gm
  • Coriander 莞茜 – one spoon (finely chopped)
  • Green onion – one spoon (finely chopped)
  • Ginger – 4 slices
  • Rice – half cup

1.  Rinse mutton and cut into large pieces. Rinse bone. Put mutton and bone into boiling water to boil for 5 minutes. Remove and rinse.

2.  Put ginger, mutton and bone in a soup pot with 3 to 4 litres of water and bring to a boil. Remove foam and reduce heat to medium and cook for one hour.

3.  Rinse rice and add to the cooking and reduce heat to medium low to cook for 2 more hours.

4.  Add salt, green onion and coriander to serve. Eat congee with some meat.

USAGE:

Not suitable when having cold or flu.
