Duck and Dried Fish Maw Soup

SYMPTOMS:

Cold hands and feet, lack of energy, lack of appetite.

THERAPEUTIC EFFECTS:

Promote yin, benefit stomach and kidney, improve circulation and appetite.

INGREDIENTS: (2 TO 3 servings)

  • Duck - one whole
  • Dry fish maw 花膠 - 12gm
  • Chinese yam (shan yao) 淮山 - 20gm
  • Goji-berry / Chinese wolf-berry (gou ji zi) 枸杞子 - 20gm
  • Nippon horn (lu rong) 鹿茸 - 12gm
  • Ginger - 6 pieces

1.   Presoak dried fish maw for a few hour or overnight until soft. Put in boiling water with 3 pieces of ginger and cook for 5 minutes. Retrieve, rinse and cut into big pieces.

2.   Wash duck, cut into halves and remove skin and fat. Put duck in boiling water to cook for five minutes. Retrieve and rinse.

3.   Rinse herbs. Put all ingredients in a soup pot with about 3 liters of water and bring to a boil. Remove foam, reduce heat to simmer for 3 hours to about 3 cups of soup.

4.   Add salt to serve. Eat some content with soup.

USAGE:

Best to take a couple of times in winter to improve health and energy.
