Coconut, Goji-berries and Chicken Soup




Benefit liver and kidney qi.

INGREDIENTS: (3 to 4 servings)

  • Chicken – one whole
  • Coconut - one
  • Goji-berry/Chinese Wolfberry (gou ji zi) 枸杞子 – 30gm
  • Ginger – 2 slices

1.   Wash chicken and cut into quarters, remove skin and obvious fat. Put chicken in boiling water to cook for 5 minutes. Remove and rinse.

2.   Break open coconut and take out the meat and cut into smaller pieces.

2.   Soak goji-berries for 15 to 20 minutes and rinse a few times until clean.

3.   Put all ingredients in a soup pot with about 12 cups or 3 litres of water. Bring to a boil, remove foam and reduce heat to simmer for 3 hours to about 4 cups of soup (add boiling water to the cooking if necessary).

4.   Add salt to taste and serve.
