Eggplant, Chrysanthemum and Chicken Liver Stir-fry

THERAPEUTIC EFFECTS:

Strengthen liver and heart, clear eyes, lower blood pressure, soften arteries and anti-aging.

INGREDIENTS:

  • Fresh chrysanthemum flower- 4
  • Chicken Liver- one
  • Pork tenderloin - 240 gm
  • Egg plant- 160 gm
  • Preserved mustard stem 炸菜 – 80 gm (optional)
  • Minced ginger - one spoon
  • Minced garlic - one spoon

1.   Rinse flower, pick pedals and put aside.

2.   Wash ingredients and finely cut each ingredient into thin slices. Soak egg plant in water with one spoon of salt to prevent browning.

3.   Wash preserved vegetable and season with vinegar and sugar.

4.   Season pork to taste (sugar, salt, pepper, cooking wine, corn starch and sesame oil, etc). Stir-fry pork first with one spoon of oil, minced ginger and minced garlic for a few minutes.

5.   Then add all other ingredients and stir to mix. Sprinkle in one spoon of cooking wine and two spoon of water and stir until most ingredients are cooked.

6.   Add seasoning to taste and add flower pedals last before serving.
