Most Nourishing Vegetarian Wanton Soup




Strengthen body constitution, promote lung and stomach health, and prevent aging.


  • Chinese Yam / Dioscorea Opposita (shan yao) 淮山 – 60gm
  • Lotus Seeds / Nelumbinis Semen (lien zi) 蓮子 – 60gm
  • Shanghai Cabbage 黃芽白 – 600gm
  • Dried Shiitake mushroom 冬菇 - 10
  • Firm Tofu 荳腐 – 4 pieces
  • Yellow-ear mushroom 黃耳 -  60gm
  • Potato - 4
  • Wanton sheet – one package

1.   Soak shiitake mushroom until fully rehydrated. Cut out stem and keep them both and put aside.

2.   Wash shanghai cabbage and cut into section.

3.   Put mushroom stem and half of the cabbage in a soup pot with 3 litres of water and cook them into a soup base.

4.   Cook potato until soft and make it into potato paste.

5.   Cook yam, lotus seed, two mushrooms, cabbage, tofu and yellow-ear mushroom together with adequate water until soft and strain. Add to potato paste and mix well together and season to taste.

6.   Use wanton sheet to wrap the potato mixture to make wanton.

7.   Use the cabbage soup base to cook wanton in. In summer, use amaranth vegetable soup as the soup base, in winter use spinach soup and in spring, use dandelion soup.

8.   Add seasoning to serve.
