Sour Plum, Prune and Duck Soup

THERAPEUTIC EFFECTS:

Promote better digestion and improve appetite, soothe stomach and intestines.

INGREDIENTS:

  • Sour plum 酸梅子 – 8
  • Lean matured duck 老瘦鴨 – one whole
  • Prune 西梅 – 240gm

1.   Wash duck, remove skin and obvious fat and put in boiling water to cook for 5 minutes, remove and rinse.

2.   Put all ingredients in a soup pot with about 3 litres of water. Bring to a boil, remove foam, reduce heat to simmer for 3 hours.

3.   Remove fat on top. Add salt to serve.

USAGE:

No restriction. Most suitable in Spring to promote digestive health.
