Bitter Melon Stir-fry




Detoxifying and clear internal heat.


  • Bitter melon 涼瓜 – one
  • Enoki Mushroom 金針菇 – one package
  • Snow-ear Mushroom  雪耳 – one
  • Minced ginger – one spoon
  • Minced garlic – one spoon
  • Cooking wine – 2 spoons
  • Chicken broth – 1/3 cup

1.   Soak snow-ear mushroom for 30 minutes or until fully rehydrated, cut of stem and separate into smaller pieces.

2.   Cut out stem of enoki mushroom and soak with water for a few minutes and rinse a few times.

3.   Wash bitter melon, cut into halves lengthwise and remove seeds. Cut each halves lengthwise once again. Then cut each pieces diagonally into thin slices. Then season melon with one spoon of salt for about 10 minutes and rinse.

4.   Cook snow-ear mushroom with hot water for about 5 minutes and strain.

5.   Warm one spoon of oil in a wok, add ginger and garlic and then bitter melon to stir fry for a few minutes. Add snow-ear mushroom and enoki mushroom and stir for a few more minutes.

6.   Add cooking wine and then chicken broth and cook for a few more minutes. Add seasoning (salt, pepper, sesame oil) and ready to serve.
