Winter Melon and Duck Soup




Diuretic and clear summer heat.


  • Winter melon 冬瓜 - 640gm
  • Duck - one whole
  • Job's tears (yi yi ren) 薏以仁 - 30gm
  • Foxnut (qian shi) 芡實- 40gm

1.   Wash duck and cut into quarters, remove skin and obvious fat. Put duck in boiling water to cook for 5 minutes. Remove and rinse.

2.   Soak herbs for 15 to 20 minutes and rinse a few times until clean.

3.   Put all ingredients in a soup pot with about 12 cups or 3 litres of water. Bring to a boil, remove foam and reduce heat to simmer for 3 hours to about 4 cups of soup (add boiling water to the cooking if necessary).

4.   Add salt to taste and serve.
