Coconut Chicken Soup


Excessive summer heat causing lack of appetite and profuse perspiration, insufficient internal fluids with constant thirst and scanty urine, weaken spleen and qi. 


Tonify yin and promote vital fluids, benefit spleen and heart and tranquilize the mind.


  • Chicken - one whole
  • Coconut - four
  • Lotus seed 蓮子  - 80gm
  • Ginger - 2 slices

1.     Saw open the top part of coconut, pour out the water from inside and keep for later as soup base.

2.     Brick open the coconut shell and take out coconut meat and rinse. Rough cut into big pieces.

3.     Wash chicken, remove tail, skin and obvious fat and cut into pieces.

4.     Heat oil in a saucepan or a wok and stir-fry ginger and chicken until slightly cooked.

5.     Cook adequate water (about 3 liters) in a pot together with the coconut water. Put all ingredients in and bring to a boil, remove foam and oil on top, reduce heat and simmer for 2 hours.

6.     Add salt to serve.
