Dangshen, Winter Melon and Eel Stew

  • Eel 白鱔 – 360gm
  • Dang shen 黨參 – 90gm
  • Winter melon 冬瓜 – 360gm
  • Garlic 蒜頭 – 60gm
  • Citrus Peel (chen-pi) 陳皮 (pre-soaked and with white tissue removed) – one piece
  • Red pepper 紅辣椒 - one
  • Dried shiitake mushroom 冬菇 – 8

1.   Soak dang shen for one hour and cook with 3 cups of water for 1 hour. Retrieve, cut dang shen into sections and leave the water aside.

2.   Rinse eel and put in boiling water to cook for a couple of minutes. Remove and clean off white film on the skin and cut into sections.

3.   Soak mushroom until soft (about 1 hour). Remove skin of garlic. Cut red pepper open, remove seeds and cut into small pieces. Remove skin of winter melon and cut into cubes.

4.   Heat 2 spoons of oil in a wok, put in garlic and pepper and put in eel to stir fry for a few minutes. Add mushroom, citrus peel, dang seng water and more water if necessary to cover the eel and cook over medium heat for 15 minutes.

5.  Add winter melon and dang seng and cook for another 15 to 20 minutes until melon is soft.

6.  Add seasoning (salt, oyster sauce, pepper) to taste and serve.
