Snow-ear Mushroom, Apricot Seed and Quail Soup

SYMPTOMS:

Yin deficiency syndrome.

THERAPEUTIC EFFECTS:

Promote yin and vital fluid, benefit lungs and clear phlegm and cough, and moisturize skin and large intestine.

INGREDIENTS: (2 servings)

  • Snow-ear mushroom 雪耳 - 20gm
  • Sweet / Southern apricot kernel 南杏 - 20gm
  • Bitter / Northern apricot kernel 北杏 - 6gm
  • Lean pork - 240gm
  • Quails 鵪鶉 – 2
  • Citrus peel (chen-pi) 陳皮 (pre-soaked and with white tissue removed) - one piece

1.   Wash pork and cut into large pieces. Wash quails, cut into halves and remove neck and tail. Put both in boiling water to cook for a few minutes. Remove and rinse.

2.   Soak snow-ear mushroom for about 30 minutes or until fully rehydrated and rinse. Separate into small pieces.

3.   Rinse other ingredients and put all in a soup pot with about 12 cups or 3 litres of water. Bring to a boil, remove foam and reduce heat to simmer for 3 hours to about 4 cups of soup (add boiling water to the cooking if necessary).

4.   Add salt to taste and serve.
